OK – So I’m infatuated with Violife Just Like Feta cheese right now. Which is funny, because if it hadn’t been for our first Cheese-Off, I never would have bought it. (The results of the second Cheese-Off are in but not yet published – stay tuned.)
I’m also infatuated with watermelon. I love it so much I won’t even take the time to remove the seeds from a slice before eating it. Thank God I didn’t have the kind of mother that instilled the fear that I’d grow watermelon plants in my stomach if I ate the seeds. I can’t imagine the neurosis today.
Today I’m out at the country house today thinking, omG, what are we going to do with all this spearmint? And how does it even grow here? Like way better than our actual tended garden?

So voila! Simple Watermelon Salad is born….
Here’s what you’ll need:
- 3/4 of a small seedless watermelon (see below)
- 1 7-oz packet of Violife Feta
- 1 cup chopped walnuts
- 2 long sprigs of fresh spearmint (peppermint is fine too)
- fresh ground pepper to taste

Note: I realize that 3/4 of a watermelon isn’t what we normally go out to the store to buy. But that’s what you’ll need to balance 1 package of Violife Feta. So go ahead and cut some up for the kids – yourself included – and “dish” that out, “stirring” up some anticipation while you “whip” up the rest. (I know – don’t give up my day job. Problem is with the Pandemic, I don’t have one. You’re stuck with me!)
1.) Cut the watermelon into 3/4″ pieces
2.) Cut the whole Violife Feta Style package into 1/4 – 1/2″ pieces
3.) Sprinkle the fresh ground pepper onto the Feta Style, to taste (trust me, the pepper helps make the salad)

4.) Chop the walnuts into small pieces if they’re not already

5.) Remove the spearmint leaves from the stem and cut them finely with a knife or scissors

Mix those all together and yay! Summer goodness. Super easy. Super good.
